Kumakichi
I had been curious about Nagasaki's Hiran and Seiten for a long time.
It is made with Yamadanishiki for the malted rice and Omachi for the premium rice, and I had a hard time imagining what it tasted like, so I was curious!
It has a mild sweet lactic acid aroma from the first sip, and the sweetness, acidity, and umami that spreads gradually in the mouth make it a pleasantly crisp bottle.
Rice Polishing Ratio : 20% Koji rice (Yamadanishiki), 80% Kake rice (Omachi)
Alcohol content: 13%.
