Kudokibe Junmai Daiginjo Jr.'s Aizan 33 New Era
The third bottle of the Aiya Festival. I think that many Jr. breweries use highly polished rice.
I think Jr. has a lot of highly polished rice.
The color is clear and colorless.
The top aroma is mild, with just a hint of alcohol.
It flows smoothly on the palate and is clear.
As soon as it is put out of the refrigerator, it has an elegant sweetness, but it is also refreshing. The aftertaste is also light and refreshing.
I thought it would be clear and clean due to the high milled rice, but as the temperature rises a little, the juiciness comes out and the sweet bitterness takes precedence. Finally, the sweet and umami flavors come together, and the lightness of the taste slows down.
If the temperature is too cold, it is hard to feel the sweet and umami, so it is better to enjoy the changes in temperature slowly.
