亮純米吟醸酒 河津桜酵母仕込み

The sake lineup is starting to look more like spring ☺️I've been eyeing Nakazawa Shuzo's Matsubi Rooster for a long time, but since I saw it at the end of the year, it's no longer in the lineup, so I bought Ryo from the same brewery. They use cherry yeast from Kanagawa Prefecture🌸.
The aroma is gorgeous. I thought it smelled like cherry blossoms, but it smelled more like young fruit, like green apples. In the mouth, the aroma is even stronger, with a hint of cherry blossom.
The taste is refreshing, with a sweetness afterwards and a bitterness lingering at the end.
As with all of the flower yeast sake I've had, I personally think the aroma is too strong in the mouth and the unique bitterness is also a bit of a bother 😅 flower yeast may not go well with me.
I like episodes that are made with local cherry blossoms and water✨.
