The rice polishing ratio is 60%, but because it is 100% Sasanishiki, it is considered a special junmai-shu. It is smooth on the tongue, with a hint of sourness first, followed by a hint of sweetness. Sasanishiki was often eaten with rice in the past, so it makes me nostalgic.
