Rice used: 100% Ginga Rice polishing ratio: 55 Alcohol content: 17 Sake meter: +1 Acidity: 1.7 Amino acidity: 1.2 Yeast: Association 1801 This is a deliciously dry ginjo-nama sake with a full-bodied rice flavor. It is clear and well-balanced overall, thanks to the use of spring water called "Daijishimizu," which has been selected as one of the 100 best spring waters in Japan. The ginjo aroma is present, and although not as gaseous as one might expect, there are small bubbles at the edge of the glass. Compared to junmai namaishu, it has a clear, mild sweetness that can be enjoyed chilled. If you like easy drinking cold sake or fruity sake, this is the one for you. ☝️
