Sake brewed with Sanuki olive yeast.
Pale yellow in color. The aroma is light, with a slight herbal note. In the mouth, it is characterized by a slight sweetness and moderate acidity, slightly dry and light. It is a little bit like Kuheiji in my sense 🍶.
I recommend letting it sit for an hour after opening the bottle. The bitterness and spiciness of the alcohol will eventually disappear. I think the fact that the bitterness and pungency are kept in check also makes it easy to drink.
