This is the first sake from Gifu in a while. It is a sake from Tajimi, Gifu. Speaking of Tajimi, it is Mino ware. Do you know the difference between pottery and porcelain? Mashiko ware in Tochigi is famous for this. Porcelain is fired at a higher temperature than pottery and is similar to glass. Arita-yaki and Imari-yaki are famous for this.
Sanzenmori is an orthodox dry sake, and when you take it in your mouth and let it go down your throat, you will feel a vertical kick. It is an orthodox dry sake, and seems to be good to drink while eating grilled fish. It is delicious.
