There is a famous sake in Ibaraki. Fuchu Homare's 1314 is named after the No. 14 yeast in the 13° original sake. 14 yeast is also known as Kanazawa yeast, and is said to be characterized by low acidity and a strong ginjo aroma. In fact, you may not have had many sake made with No. 14 yeast.
This sake is very fruity, but I felt some heavy flavors of melon and grapes. It is somewhat like a smooth, easy-to-drink black honey. It may be a mild sweetness with little acidity.
If you drink it in summer, it is good on the rocks. This is delicious. It may not be a major brand, but Fuchu Honor is definitely delicious.
