Sake purchased in Matsumoto on a trip last week.
A bottle I have wanted to try for a long time.
It is a Junmai Daiginjo from Daishinshu.
When drunk cold, the spiciness was strong at first, but as it warmed up, the spiciness turned to sweetness.
I adjusted the temperature to match today's appetizers (Aji Nanban, Yakitori, Amaebi Karaage).
The umami was strongly felt, and the sake was easy to drink.
