This is Shinigami from Kamofuku Sake Brewery in Shimane Prefecture. During the "light and dry" sake boom, the brewery thought it would be interesting to make a sake that was the complete opposite of the trend. That is why the name also goes against the grain of the sake industry, which is full of celebratory names.
The color is a very clear brown.
The aroma is mild, with a hint of takuan at the back.
In the mouth, it is sweet, bitter, and sour. Surprisingly mild? But then, a matured bitterness comes in. The bitter aftertaste lingers for a long time.
What is interesting is this bitterness. It is quite strong, but it is not unpleasant at all.
There is no information on the bottle except that it was made in May 2022, but it is clearly aged. I would laugh if it were a new sake.
If I were to use a Ghibli analogy, I would compare it to Jiko from "Princess Mononoke. He is an enigmatic character with his own quirks and underhandedness, but somehow not hateable. I don't know his age, but I am sure he is not young. He uses Chinese technology, and maybe he is a good match for Chinese.
