Nagano Prefecture. Omachi City. Kitayasu Brewing Company. Iyari-ri Yamahai Junmai Harasake Hiyoroshi. This is the fourth Hiyoroshi sake of the season. It is served cold. The color is a deep yellow, which gives a sense of maturity. The aroma is slightly sweet and sour. The mouthfeel has a characteristic sourness, perhaps because it is Yamahai, and both sourness and umami spread at once, with a good sense of maturity that is tinged with the maturity of hiyaoroshi. There is also a peculiar bitterness from the firm acidity. I tried to write it down, but I opened the bottle continuously after drinking quite a bit, so I don't really remember the exact taste due to the atmosphere😅.
