This is the best part! Ibi-no-Homare, a rice developed in-house, is used. It is said to be the smallest sake brewery in Japan, and is one of the "hardest to find sake in Japan" due to its extremely small production.
The "cemedine taste" is due to an aroma component called "isoamyl ester" in technical terms. When it is strong, the aroma is sweet and punchy, like banana or melon. Imi has a prodigious balance between this aroma and a profound umami flavor.
Pairing suggestion: Because the energy of the sake is so strong, it will not be overpowered by dishes with strong flavors. It pairs best with peculiar fermented foods such as saikyo yaki silverfish and blue cheese!
