Matsuo Tosa Rei 100% Junmai Sake
Tosa Rei is a rather new rice suitable for sake brewing in Kochi Prefecture.
The aroma is mild, with a slight acidity at the beginning that disappears after the taste.
Matsuo originally has an old-fashioned Junmai sake atmosphere, but the use of Tosa Rei makes it a gentle and catchy sake that is easy to drink while retaining its atmosphere. The brewing water is deep seawater, which is interesting and easy to recommend.
I also had a taste of the sake.
He said that the usual Matsuo has a more matured taste, but this is easy to recommend as an entry point to Matsuo, and on the other hand, traditional fans may be surprised to know that such a pattern is also available.
The brewers of Matsuo and Kameizumi seem to be the biggest sake drinkers in Kochi🤣.
