I'm going to be working remotely for a while, so maybe I can drink in the daytime? I thought about it for a while, but I think I'm more comfortable drinking at night.
Anyway, this week we decided to open this year's Honored Chrysanthemum!
It's a natural lactobacillus brewing, so it's what we call a "shoujo" type of sake, but I personally think the aroma is a little less lactic and more citrusy with a hint of melon sweetness.
The taste is sweet at first, then it becomes refreshing sourness, and at the end, it becomes slightly bitterness.
The last time I tasted this sake, I said that it had a balance of sweetness, umami, sourness and bitterness, and this one has a similar balance with a little more sweetness.
My impression of Kouyougiku is that it is fruity, sweet, gassy, and refreshing, but this kind of mildly balanced type is also good.
