The current head brewer's son was trained at Baishiki Shuzo in Ehime Prefecture.
After returning to the brewery, he decided he wanted to make a truly delicious sake, and through a process of trial and error, he created Fusajimaya.
It is now a nationally recognized brand.
Color: Basically, it is light yellow barberry (Amur corker) but its color is a bit more cloudy because it has its own color
Scent: light and lime scent
Taste: There's no gas, as you might expect from the energetic "clunk" when you open the bottle.
Like the aroma, it has a light acidity, like lime, followed by a rice flavor and sweetness. It also has a firm bitterness.
