Hachisen's first Yamahai brewing using 100% "Gin Karasu" from Aomori Prefecture.
It was aged for four years in a refrigerator at home.
Strong sweetness like honey.
At the same time, there is a bitter taste that comes with it.
It also has the flavor of old sake due to its maturity.
When I paired it with sardine dumpling soup, the bitterness was lost and only the richness could be felt.
