This is so sweet! This is it! It seems that yeast CEL-24 is the yeast used for sweet sake. It's so sweet, you'd swear it was sugar! It's so sweet you'd swear it was sugar! The sweetness spreads in your mouth as you drink, but the astringency spreads behind it as if it is overtaking the sweetness. This is miso. Even though the sweetness is stronger than expected, the astringent aftertaste makes you want to drink something sweet again. Infinite loop!
