Gassan Hiyayogoshi has a modest top-fragrance aroma. From a clean mouthfeel, bitterness and astringency in the latter half. This is a sake that reminds one of the depths of autumn.
The pairing is tuna cheek meat with fruit. The red wine-soaked extract comes out from the chewy tuna meat. Five kinds of fruits accentuate the acidity and texture.
