Kyokusen Junmai Dry Taste I was somewhat curious about this sake, which was sold in a set of two with a Junmai Daiginjo at a local sake brewery in Kanazawa. The taste was a shock to my tongue, and the aroma that passed through my nose made me feel like I had climbed the ladder to adulthood. This is exactly the image I had of sake. Bitter or pungent, or something like that. I apologize for my poor expression. THE alcohol! I thought it would go well with something with a strong flavor, so I enjoyed it with some shiso miso (from KALDI) and kimchi (kimchi). However, now that I have enjoyed several bottles of sake, I personally feel that it is better to enjoy the dry sake with a gentle soup stock such as Kanazawa oden to keep a good balance.
