＜Sweet and delicious, with plenty of rice flavor.
The color is a solid white nigori sake.
The aroma is lactic acid, rice sweetness, refreshing alcohol, and a hint of banana.
In the mouth, it is an umami sweet nigori sake with a lot of rice flavor. The umami flavor comes first, followed a moment later by a slight carbonation. Then, there is a hint of rice sweetness. From there, a rich bitterness comes through. The pleasant alcohol is wafted in.
It tastes great. However, the sweetness is less than last year and the bitterness is stronger. Somehow, I have a feeling that it will get sweeter if it is left to stand.
I asked the master about it and he said it was drier on the first day the bottle was opened. This was the sixth day, and the flavor had finally opened up.
If I were to use a Ghibli analogy, it would be Nausicaä from "Nausicaä of the Valley of the Wind". It is the same as last year. But it's a bit bitter and hard-edged, so it's the original Nausicaa.
