Sake Sake because precious sake was used in place of brewing water.
The aroma is surprisingly stronger than sweetness.
I think it is because this is the second time to brew the sake, so it contains at least 2 years old sake.
The taste is sweet, but the acidity is also quite strong.
It is a bit similar to Shinmasa Yatagarasu, which is also a remanufactured kijoshu, but the type of acidity is different.
It might be similar to the jujube-like sourness of Tsuchida or Senkou's all koji sake, but it has no other koji taste and is easy to drink without any harshness.
