DAN" is rapidly gaining popularity mainly in Kansai and Tokyo area.
Mr. Masakazu Ito, the master brewer, was recommended by Mr. Naohiko Nouguchi, one of the Four Heavenly Kings of Noto Toji, to join the Sasakichi Sake Brewery.
The sake is already in the reservation stage, and the sake dealers are fighting over it!
The synonym for "Dan" is "Yamahai", but "Hayajou" is also very popular.
The junmai ginjo introduced here is made with Yamada Nishiki for both koji rice and kake rice, and the milling ratio is 55%.
Since it is a Junmai Ginjo made entirely of Yamadanishiki, it is sure to be a very popular sake.
Now, let's start tasting.
The Junmai-shu has a mild rice-derived aroma, but the Junmai-Ginjo has a very refreshing melon-type aroma.
There is also a rich aroma behind the refreshing scent.
When you drink it, you can feel the softness of the goodness of the water and the flavor of the rice, and although it has a powerful taste, it is clean and gentle, and the acidity leads you to a beautiful aftertaste.
This is a sake that can be enjoyed cold or warmed.
