This is the first time I drink Iwatoyo.
It is a limited edition sake from the Niigata Daiichi Sake Brewery of Yamama and Koshi no Shirotori.
I heard that it is stored at an ice temperature for one year.
I didn't know that.
It is served chilled.
It is dry but has a rich flavor.
It has depth and the aftertaste lingers.
As the temperature rises, the sweetness comes out.
It is more delicious at room temperature.
