KANHOKUTO Low-polished rice test brew.
KANHOKUTO is currently seeking low-polishing rice.
I had never had Kanpokuto because of its dry image. I bought it at a liquor store in Kyoto, which I don't go to often because it is far away.
I had it cold.
The top aroma is mild, with a hint of apple and apricot.
The mouthfeel is slightly gassy with a hint of acidity.
As soon as it is put out of the refrigerator, it is clear and refreshing with a sense of dignity and transparency that one would not expect from a low-polished wine, while the acidity is felt at first.
As the temperature rises a little, the acidity gives way to green apple-like fruitiness. Minerality, slightly elegant Wasanbon-like sweetness, and an aftertaste of bitterness that is not bothersome. The aftertaste is mild, but you can also feel a refreshing alcohol taste.
It tastes better at room temperature than when chilled.
