New brewery re-launched last year✨
I think this is probably my first experience with both the rice used "Celebration" and the yeast used "Kyo no Koto".
Sweet aroma with a sense of freshness. Not too fruity, classic sake aroma 🍶.
It goes through smoothly without corners like water 🍶.
Light green apple and muscat-like fruit, acidic and lemon-like. It has a refined sweetness. Overall, it is round, gentle, and nicely integrated. The acidity is impressive🍋.
Somehow a strange sensation that I haven't experienced very often...
The acidity makes it feel like a modern sake for a moment, but it seems like it's basically a classic sake 🤔.
