We did it! It is Mutsu Hachisen Nouveau. This sake is one that I look forward to every year. In fact, when I asked when the last time I bought the sake I posted about would be in stock, I was told that orikara-mi was available. I was surprised to hear that they have orikara-mi. Without hesitation, I bought it in a bottle. (Actually, it is over my budget).
I was looking forward to drinking it, so I chilled it well before drinking it, which was unusual. On the first day, the bottle opened with a sizzle like a new sake. When I drank it, it was not as sweet as I expected. Recently, it has tended to be sweeter, but it may be a bit on the dry side.
And it is the second day.
The opening of the bottle changed from a "juwak" to a "ponk".
By exposing it to air, it went from dry to soft.
It is still a youthful sake, but the taste has changed a little, so I will try to follow it this year.
