I did an experiment to compare old and new drunken whales.
1) Purchased yesterday
(2) Purchased three years ago and stored in a sake cellar (-5 degrees Celsius)
(1) was dry with a nice aroma and a high acidity, but a little bit of a tangy taste was bothersome. (2) has transformed into a smooth dry sake with a moderate aroma, and is interesting because it seems to be a step up in quality.
