This sake won the gold medal at the National Kanzake Contest 2021. It uses the same sake rice as Tsubosaka Shozo, Benkei.
When served cold, the acidity leaves more of an impression than the umami, but when heated, the umami opens up and the acidity kicks in. It's delicious.
