＜Sour and delicious, dry, a perfect food wine.
The first impression on the palate is a smooth, mild acidity. From there, the acidity and umami are in full swing. Then, the acidity and umami is further enhanced by the acidity and umami buzz. It is a dry sake with little sweetness. It is a sake to be served with a meal.
The entrée is old pickled cucumbers. The acidity of the rice bran works well and dissolves the acidity of the sake. It also brings out a hint of sweetness that should have been almost absent. This is a winning combination. To be honest, it's not my favorite type of food, but thanks to the atte, I was able to enjoy it.
If I were to use a Ghibli analogy, I would compare it to Hara Motoro from "Castle in the Sky. He is the engineer of the Tiger Moth, the "scarier than Mom when she gets angry" Jicchan. At first glance, he seems to be just a stubborn and strict old man, but there is more to him than that. In the last scene, when the kite with Pazoo and Sita on board reunites with Dora and her gang, everyone else is saying, "It's Sita! I like the way he shouts, "It's the boy! I like it.
