The sake I drank on a business trip to Yamanashi Prefecture before the emergency declaration. I ordered Shichiken, a representative sake of Yamanashi Prefecture. This sake is made from Hitogochi rice grown in Yamanashi Prefecture. The rice polishing ratio is 70% and the taste is dry and refreshing. The aroma is subdued and the aftertaste is short, so it's refreshing and easy to drink. It was a good sake both as a mid-meal drink and as an aperitif! The date of production was over a year ago, but it was delicious and had a strong flavor.
