The second bottle of the new year was Marubi Shiboritate Nama by Hiraizumi, which I had hoarded.
Brewed with Miyamanishiki O yeast No. 77, it has a fresh acidity and sweetness that makes you feel as if you are enjoying a fresh apple!
The Marutobi series is generally sweet, but this one was a refreshingly sweet and tart aftertaste!
Rice polishing ratio: 60% (100% Miyamanishiki from Akita Prefecture)
Alcohol content: 14%.
