Takatsugu
Makihata" by Takachiyo Shuzo. This is the first time I have had it.
It is an unfiltered unpasteurized sake brewed using 100% "Ipponshime" sake rice grown in Uonuma, Niigata, and carefully polished with flat polished rice and micro-bubble rinsed rice.
It has a slightly fizzy taste with a tangy sensation on the tongue. The taste is clear and clean with a fruity sweetness and a refreshing aftertaste. I don't know if this is a characteristic of the sake rice or a result of the meticulous rice polishing, but I don't care as long as it tastes good.
This is a bottle that I would like to compare with other Takachiyo sake brewery's products. It is delicious. ‼️
