We had a bottle of Shinmasa again, as we did yesterday. I drank it with my family and we were all surprised at the taste. The impact of the acidity gave it a new sensation that was hard to believe it was sake, and it was so delicious that it ran out quickly. The sweetness was less, and the aroma of the wooden vat could be felt.
Niimasa is amazing.
