Kouei Kiku Tsukikage
I had never had Tsukikage before. I've never had Kouei Kiku Tsukikage before, but I tend to be put off by its high price.
It has a strong acidity and a juicy sweetness and bitterness. The first time I opened the bottle, it was sharp, but I was told that the sweetness and umami would open up as time passed.
I didn't know they were using Jinchoku.
