This is unexpectedly dry.
Of course, as is typical of Kouzutsuru, it has a strong umami flavor, but the end is unexpectedly sharp.
According to the description, this is a characteristic of Hyogo-Kitanishiki.
Except for the sharpness, the rest is as expected of Kozumitsuru.
Perhaps it is because it has been aged for a year, but the taste is milder and mellower than usual, and you think, "Ah, this is delicious," but the flavor disappears rather easily, leaving a pungent taste.
I would like to enjoy the umami a little longer, but this is delicious.
