Here's another Gokotsuru I bought for the GW continuous opening challenge 🤗.
I'm working hard on the 7th 🤣.
This sake is brewed with a rare local sake rice called Kinmon-nishiki 🥰.
My impression of the taste is that it is well-balanced in a good way‼️.
The acidity, umami and sweetness are exquisite😊.
It's neither trendy sweet and delicious nor classic lightness.
Just right 🤗
Would that be a characteristic of the sake rice called Kinmon-nishiki?
Coco's sake is also becoming more and more popular lately on Instagram 😁.
I'd like to try some sake brewed with other sake rice 👍

I️ remember that this brewery was revitalized as well.
I hope they will continue to brew good sake, but only at a reasonable volume.
