The aroma is subdued, with a hint of apple and rice ginjo.
On the palate it is not fruity.
The taste is mainly sour and bitter, with a hint of sweetness. When it becomes room temperature, the umami expands. The sourness and bitterness with a dry feeling are firm. I prefer it at room temperature.
The bitterness and spiciness are tingling on the tongue and it becomes sharp.
The hardness loosens with the passage of the day, and the impression is that the depth comes out without losing the balance.
This is the kind of sake you want to drink while picking up some good sushi.
It is not a modern style sake, but this direction is also good and nice😄.
