Sake from a sake brewery near Pekho-san's parents' home.
The brewery uses local rice called Yumeginka from the Chita Peninsula in Aichi Prefecture.
As the description says, "It is characterized by a light and soft taste.
It has a light mouthfeel with little depth and heaviness.
The taste is not umami or sweet, but rather it is united by spiciness, a slight acidity, and astringency.
It was served chilled.

I thought it might be somewhat dry, and at my husband's request for the first filleted pork cutlet in a long time, I had it with filleted pork cutlet and wonton casserole! Surprisingly, it has a subtle sweet aroma, a moderate sourness, and a tangy sharpness. It was quite ⭕️ with the hot filet mignon!
