Overall 7 (out of 10) Sake from a sake brewery near Pekho-san's parents' home. The brewery uses local rice called Yumeginka from the Chita Peninsula in Aichi Prefecture. As the description says, "It is characterized by a light and soft taste. It has a light mouthfeel with little depth and heaviness. The taste is not umami or sweet, but rather it is united by spiciness, a slight acidity, and astringency. It was served chilled. The aroma I felt  -Aroma: Ginjo aroma👍  -Aroma: Astringent aroma Taste sensation The higher the number, the stronger the taste (5 is the maximum)  -Spiciness: 3 at the beginning → 3 in the aftertaste  -Sweetness: 0 at the beginning → 0 in the aftertaste  -Sourness: 2 at the beginning → 2 in the aftertaste  -Bitterness: 2 at the beginning → 2 in the aftertaste  -Astringency: Start 2→ Lingering 3  -Rice flavor: 0 at the beginning → 0 lingering 0 Mouthfeel I felt】→2 Smaller number = light and smooth Bigger number = thicker and richer (5 is the maximum)

I thought it might be somewhat dry, and at my husband's request for the first filleted pork cutlet in a long time, I had it with filleted pork cutlet and wonton casserole! Surprisingly, it has a subtle sweet aroma, a moderate sourness, and a tangy sharpness. It was quite ⭕️ with the hot filet mignon!
