A bottle that I opened and drank through in a matter of seconds. I must remind you...
On the first day, it was very fizzy and dry, even pungent; after the second day, the usual muscat aroma came through, and the last glass on the fourth day had a nice harmony of sweetness and acidity, thanks to the oli that had accumulated.
I have never been a fan of sake injected with carbon dioxide gas, as it seems a bit artificial compared to sake with stronger gas or secondary fermentation in the bottle, but I really enjoyed the changes that could be felt over time.
It's been a while since I've had a micro-bubble of Tasake, too.
