Echigo-Tsurukame is famous as the pioneer of wine yeast brewing!
It has a caramel-like sweetness, a wine-like acidity, a light alty taste on the nose, and a slight bitterness, and it finishes with a refreshing crispness!
It is different from the wine yeast brewed Hato Masamune and Hououmida... It has a very light aftertaste, yet it has a wine-like astringency.
It seems to have a characteristic or not...it is difficult to evaluate...
I've had a lot of wine yeast brewed sake, so that's how I feel about it, but I think it would be rather shocking if a beginner to sake drank it.
