I was attracted by the rarity of the sake, so I bought it.
It has a soft aroma of rice, a strong umami flavor, and a soft acidity that leaves you feeling refreshed.
I think it would go well with fish stewed in sweet and spicy sauce.
Yokohama has a surprisingly large number of rice paddies and fields, but I had never heard of a sake rice producer or a project that focuses on 100% Yokohama-grown rice.
I would like to keep an eye on it.
