Somehow, I was in the mood for something a little different to drink. Ine Mankai is a bit pricey at izakaya (Japanese style pubs), so I did not drink much of it. I bought it at a sake shop.
It has a characteristic sourness, so I don't feel like I'm drinking sake. I wondered if the sourness would come out if it was made with old rice, or if Himiko had grown this black rice, and my imagination was filled with the changes and evolution of sake. I admire Mr. Mukai for trying to differentiate his sake without leaning on the sake of today.
