It is a sake brewed by sedimentation sedimentation sake company in Shimane Prefecture. I think it's because I bought too much alcohol before the summer and I haven't gotten around to doing any hiyaoroshi until now. So this will be my first Hiyaoroshi of the season. I love hiyaoroshi because I feel like I'm drinking sake, so next year I'll learn my lesson and stop buying so much sake before summer 😱.
The aroma is sweet, and the sake seems to have aged well. It tastes like a Hiyaoroshi, with a lot of umami on top. However, the taste complements the meal without interfering with it, and it's the kind of sake I wanted to drink...
