Rice used: Yamadanishiki (Domaine Sakura, Sakura City, Tochigi Prefecture) Polishing ratio: Koji rice: 50%, Kake rice: 60 Strength 14 Sentori is famous as an adult lemon squash, and Kabutomushi is one or two of Sentori's best. I was curious about it, so I bought it! Let me preface this by saying that it is refreshing from the aroma! The aroma is refreshing, and although there may be some preconceived notions, it really does have a sweet and sour lemon-like aroma. The slightly hard and viscous brewing water gives off a lemon-like sourness that hits the tongue with a bang. There is a hint of sweetness, but the overall taste is light and refreshing. It also has a nice aftertaste, with a moderate but sharp finish. It is not too sweet, which is good. It might be selfish of me to think that I would be happy if it also contains carbonation.
