Mizuo Junmai Ginjo Kogin
Junmai Ginjo-shu made from 100% Kinmon-Nishiki.
The aroma is subdued, but there is a slight apple aroma.
The impression is a little mature. In the mouth, it has a refreshing umami and sweetness, followed a little later by a pleasant bitterness. Some people may not like this bitterness. Personally, I like it.
It does not leave much of a residue on the palate, and the mouthfeel is surprisingly refreshing. The sake is light and clean. It has a taste of elegance.
The taste has a bit of complexity in its cleanliness, making it enjoyable to drink.
This is delicious. So far, there is no shortage of Kimmon-Nishiki sake!
