Aizan, produced in Mima City, Tokushima Prefecture, at the foot of Mt. There is also a draft version, but the one we were able to obtain was hi-iru (fire-irrigated). I imagined it would be a sweet sake because it is made from Kangiku and Aizan, but it was surprisingly refreshing and not too sweet. The mountain on the label, by the way, is not Kenzan, but Jirooi, which is next to it.
