A series of sake brewed with Association 1801 yeast using different types of rice.
The rice called Ipponjime from Niigata Prefecture is polished to 59% flat rice.
This is the most fragrant of the MISHOP yeasts, and it has a gorgeous aroma.
It is also quite sweet.
Is it fruity like melon or pear?
The sweetness is more intense than the fruity taste, and there is also a moderate bitterness.
It's delicious, but I think I'll get bored if I keep drinking it.
