Sharaku Yumachi Comparison✨The same Yumachi, but this is Akaban Yumachi.
It has a modest entrance with a gentle sweet aroma and just a hint of beautiful acidity.
When you put it in your mouth, it is beautiful and clear, with plenty of umami, supported by the balance of the wonderfully soft acidity, spreading in your mouth.
The finish is soft and relaxing, with the acidity gently swelling at the end.
It is also excellent 🍶.
From the entrance to the end of the mid-palate, it tastes almost exactly the same as Bizen Oumachi. The only difference is that Bizen Oumachi does not have the acidity coming forward at the finish, whereas Akaban Oumachi has the acidity swelling up at the end.
The difference in taste is not so much the difference in rice as it is the difference in the way the sake is made.
I was impressed by the fact that the two types of sake are almost the same except for the acidity at the end ✨✨.
