A bottle of Kijo-shu from Masamune Instrument, which uses sake as part of its brewing water, was opened. It has a mellow taste with a soft sweetness that spreads quickly. The alcohol content is surprisingly light at 13 degrees Celsius, which is a bit surprising given the gap between the taste and the alcohol content. I have been enjoying various brands of kijoshu recently, and this bottle made me feel the expansion of the way to enjoy sake. Delicious: ❗️
