Smooth mouthfeel. Bitterness.
Flavor of peach pineapple, a little vegetable, celery and other herbs.

The acidity lingers on the back of the tongue until afterwards and is bitter.
Not bad, but this is...an unusual balance.
If it were a food sake, it would be a good accent.
